Biochemical properties of three races of the bake yeast
Using by fermentation technology cultivated yeast Saccharomyces cerevisiae of races Я, B, XII were tеsted. Comparative dynamics of the population growth and composition, cell morphology and its fermentation ability were retraced.
Cell reproduction speed and metabolic coefficient for race B were considerably higher then for another races. At the same time concerning the carbonic acid gas production, races Я and XII excelled race B in 1.5 times on the average.
New integral index for these yeast races vital activity was offered. Probably, this index is constant for all representatives of this species and can be used as one of the systematic signs for Saccharomyces cerevisiae.
