This paper is devoted to upgrading and improving the food culture of the indigenous population of the Altai Republic. The given problem is examined in the context of ethno cultural interaction of the Altais with the Russians during two and a half centuries, from the moment when the Altai Mountain Region entered the structure of Russia. The basic conclusion is, that in spite of some innovations introduced by Russian culture, the traditions in the Altais# feeding system are steadily kept up to now.
